Everyone that has tasted my cajun cooking, has loved it. I lived in Baton Rouge, La for 17 years, and absolutely love the cuisine. Now that I have returned to my hometown in the north, I am limited to very few of the necessities needed to make GOOD cajun food. I also want to let you know that I have given samples of your spices to several chefs in town, for them to try personally. I also use the jar of crawfish boil in my pickled okra and pickled green tomatoes.

I love this product because I am a native of Louisiana and there are no products of the back home spices in North Carolina. Using this product gives me some memories of living in Louisiana.Keep up the good work!!!!! :)

A friend from Louisiana, got me hooked on boiling shrimp and this is the only way to buy, he used to bring me back one every time he went home for a visit. Problem is he moved back to Louisiana and now that I've NolaCajun.com I can again get all that flavor, without breaking the bank.

The Zatarain's tradition of making amazing food was started by Emile A. Zatarain, Sr. In 1889, he obtained the company's first product trademark and started to market root beer. Shortly after, he began to produce mustards, pickled vegetables, and extracts. As the business grew, so did the demand for a broader range of products. Through their expertise in blending spices, the company established a reputation for making only the most authentic New Orleans-Style food. In 1963, the Zatarain family sold the business which was then moved to Gretna, Louisiana, a suburb of New Orleans, where it is still located today.
SALT, DEXTROSE, SPICES (INCLUDING RED PEPPER), NATURAL FLAVOR, EXTRACTIVES OF PAPRIKA, MONOSODIUM GLUTAMATE (FLAVOR ENHANCER), LEMON PUREE, SUGAR, AND LEMON JUICE.
Directions:1. Place 6 gallons of water or enough to cover seafood and contents of package into large cooking container (60-72 qt), stir, and bring to rolling boil. Add seafood to boiling mixture, stir, cover tightly and return to boil. (If seafood is not covered, add additional water).2. Cook for the time shown in the table. Turn off heat and soak for the time shown in the table.3. Drain carefully and serve.
