Emile Zatarain's first product in 1889 was root beer, and the company still packages Zatarain's Root Beer Extract to this day. This concentrate comes with directions for old fashioned bottled preparation, or easy preparation by the pitcher. The kids will love it and so will the kid in you!

I make a diet root beer syrup for use with a Sodastream machine (1/2tsp pure Sucralose, 6Tbsp Extract, put in a Sodastream syrup bottle and fill almost all the way with tap water) and it does really nicely. It is a little strong for the first few days and therefore tastes a little too medicinal, but a rest in the fridge for a week and it's perfect.

The Zatarain's tradition of making amazing food was started by Emile A. Zatarain, Sr. In 1889, he obtained the company's first product trademark and started to market root beer. Shortly after, he began to produce mustards, pickled vegetables, and extracts. As the business grew, so did the demand for a broader range of products. Through their expertise in blending spices, the company established a reputation for making only the most authentic New Orleans-Style food. In 1963, the Zatarain family sold the business which was then moved to Gretna, Louisiana, a suburb of New Orleans, where it is still located today.
